Roasted Kamala Lamb With Herbs and Mint Jelly

Kamala doesn’t need more roasting in 2024, yet this may be the last chance to satirically celebrate her political prominence (though polls say many Democrats would like her to run again in 2028). For Thanksgiving Day, this Roasted Kamala Lamb Dish is well accompanied by a Kamala word salad and mint jelly. Kamalized onions make a tasty additional garnish.

Ingredients

  • 1 5- to 6-pound boned leg of lamb
  • 8 to 10 large garlic cloves
  • Ground black pepper
  • Himalayan Salt
  • 2 tablespoons butter
  • 3 to 4 pounds small potatoes, unpeeled
  • 1 tbsp freshly chopped rosemary leaves
  • Olive oil

Directions

Preheat the oven to 450 degrees F, and adjust the oven rack to accommodate a large roasting pan. Peel and finely chop the garlic cloves, then add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Blend thoroughly, then coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.

Toss the potatoes in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Set the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours until a meat thermometer registers 130 to 140 degrees F (for medium-rare). Place the lamb on a cutting board, cover with aluminum foil, and let it rest for 15 minutes. Slice and serve with the potatoes and mint jelly.
